So, my wife thinks that my home fries are sexy. Here is how I make them...
- 2 or 3 or 4 potatoes, depending on how many mouths you need to feed and how hungry the mouths are
- Spices (no real quantities of these, just enough to sprinkle): Seasoning Salt, Garlic Salt, Goya Adobo All Purpose Seasoning (usually in the Mexican food section of your grocer), Dried Onions (from the spice aisle), Parsley Flakes
- Olive Oil
Preheat your oven to 400 degrees Fahrenheit. Pour out enough olive oil onto the sheet to cover it well, but you don't want the potatoes swimming in it. If this is your goal, and you love oil this much, just deep fry them.
Wash the potatoes, if you want. You don't really have to, and I rarely do. Cut them into wedges, probably ~10-12 wedges per potato. Situate them onto a baking sheet. I think ours in about 12"x14", but the important thing is that the potatoes can fit, lying close to one another but not on top of one another.
Sprinkle the spices onto the potatoes. You don't have to use all of the above spices. I think the most important ones are Seasoning Salt, Dried Onions, and Parsley Flakes. Without these, you may as well hang it up until you can sashay yourself to the store on a spice shopping spree. Take the parsley and sprinkle it on lightly - enough to give the dish some color, but not an overwhelming amount.
Now, cook the potatoes for about 30 minutes, or until they start to really brown and kind of crisp on the outside edges - you'll know when it is time if you pay well enough attention.
